Recipes for success

The large amount of school work and extracurricular activities many
South students participate in does not aid healthy eating habits.
After school, it’s easy to grab a bag of chips and a can of soda
instead of eating a healthy dinner. It’s important to eat a well
balanced meal after running around all day, and while a small amount
of carbohydrates are good for you, an excess of them is not.
Rather than eating an entire bag of fried chips, it’s incredibly
simple to make your own baked chips in only ten minutes. To add some
vegetables to your snack, make salsa or guacamole. While you’re at it,
you might as well make a quick and healthy dinner.

Grilled shrimp and vegetable skewers with sides of baked corn tortilla
chips, guacamole, and salsa fresca are the perfect way to accommodate
many food groups in a fast and delicious way excluding all the fat.
Follows these recipes in order to make sure all the separate dishes
are ready at the same time and you can’t go wrong. These recipes will
comfortably serve two for dinner.Salsa Fresca

½ white onion
1 bunch of parsley or cilantro
2 tomatoes
¾ tsp. salt
1 jalapeño pepper
Juice of ¼ of a lime

Directions: Dice the onion, tomato, jalapeño pepper, and cut up the
parsley. Move all into mixing bowl, add salt, and mix. Cover bowl with
plastic wrap and place in the refrigerator.

Guacamole:

2 ripe avocados
½ a tomato
½ small white onion
½ tsp. salt
Juice of ¼ of a lime

Directions: Cut avocados in half and use a large spoon to remove the
fruit from the skin. Mash avocados in a large bowl. Dice onion and
tomatoes and add to the bowl. Add the salt and the lime juice and mix
together. Cover bowl with plastic wrap and place in the refrigerator.

Tortilla chips:

3 corn tortillas
Salt
Olive oil

Directions: Preheat oven to 350° Fahrenheit. Cut each tortilla into
quarters, or eighths (personal preference). Drizzle oil on a cookie
sheet and spread with a pastry brush. Place tortilla slices on the
cookie sheet and pat each slice with some oil. Sprinkle salt
generously over the slices. Bake in the oven for 6 minutes or until
crisp and golden brown.
Shrimp and vegetable skewers:

18 shrimp
½ a red bell pepper
1 small white onion
1 ½ tbs. olive oil
¼ tsp. chili powder
Dash of hot sauce
1/8 tsp. of garlic powder
Salt and pepper to taste
Juice of ½ a lime

Directions: Clean all of the shrimp and set aside on a paper towel to
dry. In a small bowl mix the olive oil, chili powder, hot sauce,
garlic powder, salt, pepper, and lime juice. Put the shrimp in a large
Ziploc bag and pour the mixture in over them. Securely close the bag
and shake until all the shrimp are coated. Skewer them, 9 on each
skewer, and make sure all the shrimp are facing the same direction.
Set aside. Cut the pepper into 1 inch squares, and the onion into
quarters. Skewer the vegetables all on one skewer alternately (onion,
pepper, onion etc.).

Heat a grill pan over medium heat and brush on a small amount of olive
oil. Put the vegetable skewer on the pan and cover (they will grill
and steam at the same time shortening the cooking time). Make sure to
keep an eye on them and turn them when necessary to avoid burning.
While they’re cooking remove guacamole and salsa fresca from the
fridge and serve in small bowls. When they’re done set aside and
immediately place the shrimp skewers on the grill pan. They will cook
very quickly so watch them to avoid burning, and flip when necessary.
Shrimp are done when they have turned pink. Place chips, salsa,
guacamole, vegetable skewer, and shrimp skewer on one plate and enjoy.
Use any extra lime wedges to spray shrimp with for additional flavor.
